Just picked this bike up on a whim yesterday, I paid 600$ for it.

I'm pretty new to this stuff I guess, I've been riding about a year. My first motorcycle was a 1974 Honda cb125, I remember seeing a Honda Dream for the first time and then really REALLY wanting to find one I could fix up haha. A friend of mine just happened to have one sitting in his shed, along with a bunch of spare engines! So we worked out a deal involving the bike and necessary parts.
The good is that the engine isn't stuck, it shifts through all the gears. It's just about all cosmetic work.
The bad is that the stator is fried, and the kickstart doesn't engage. You can push the kick start lever down but it doesn't turn the engine. It doesn't scare me too bad because the starter motor still turns the engine over, so if I can't fix it I can just either get another engine or exclusively use the electric start, but yeah.
I'm still pretty new to ground up restoration, I'll usually fix bikes to get them running and then ride them for a bit and sell them, but for this bike I really want to do a ground up restoration. I just don't know where to start!
I figured the best place would be just pulling the engine right out so that's what I've begun on today. I've taken off the...
-Foot Pegs
-Shift Lever
-Headers
-Mufflers
...and I've undone the bolts that secure the carburetor to the engine itself (found a rats nest in the air filter too!)

Let me know if you folks think I should start somewhere else on the bike, like I said this is my first restoration, and anything I can do myself I definitely want to haha. Funding is not super tight but I'd like to keep cost down haha. I'm excited to join this community and start riding! I'm hoping to enter the MotoGiro next year with this bike.
Absolutely any advice pertaining to the restoration process will be greatly appreciated, as will recommended literature and businesses I may need to partake in the services of.
Things I want to do:
-Replace all the rusty old bolts with shiny stainless steel ones
-New rings, maybe resurfacing too of machined surfaces (I used to work in a machine shop and they might cut me a good deal!)
-Carb rebuild (duh)
-Touch up the really bad rust spots (I've noticed wrinkled fenders are pretty common to these bikes...)
-Replace the rigged up battery
-New Cables
-New Levers
-New coils/ignition cables
-Replace the regulator/rectifier (Do these go bad as often as the CB series?)
-Anything else you guys recommend!
Thanks a ton! I want to use this thread as a way to keep myself motivated over the winter, I start college in January (Automotive Trades Tech!
