As soon as I got away from the standard .25 .50 .75 and 1.0 bore the can of worms overflows.
I now have two cylinders to work with, one that has an undetermined little gouge but once bored it will definitely be no more than 1.0 over.
The other cylinder only needs to be honed but it is a 3.00 big bore. Although one piston is in question, I am hoping both pistons might be ok. I have found 3.00 over rings. I would need to find a new head gasket since I shouldn't attempt to use the old one (darn).
Are the over bore gaskets available?
I could possibly save both these engines.
Since I am not a much of a motor guy, more of body and fender guy... I could use your opinions on where to go with all this!
Oversize pistons and rings and gaskets... oh my!

Why don't you just buy new liners, pistons etc, instead of trying to run down a bunch of parts and cobbling something together. Tim at Classic Honda Restoration can help you out with what you need.

I thought it would be more money to use Classic Restoration's kit. What is the cost difference between cobbling and buying the kit with new liners, pistons etc?
Here is how I do the math, keep in mind I am pretty dim when it comes to any of this and I may be totally off so help is appreciated.
Classic restorations kit $389
Putting in the sleeves, and they still need to be bored etc. $150 plus.
Not including gaskets the total is at least $539
For $100 not including the gasket i need, the "Big Bore" cylinder would be up and going with the rings available for $50 and a hone for $50.
On the second engine $283 will buy both pistons from Ohio at $100 , Rings at $55. Pins at $25, keepers $3 not including gaskets.
By the time I buy the full set of gaskets and find other things the motors need like timing chain etc.. money starts acting like water for a bike that may not ever see much real time on the road.
