When painting the fenders, headlight bucket and those type of parts do you paint the insides and bottoms or just leave them primer?

All looks better when finished in the final colour, Brian. Although there's no need to be too fussy about the quality of finish. Leaving primer would just show a lack of attention to detail, IMHO.

I wouldn't leave anything primer. Primer will not protect the metal like paint will. I would paint both sides.
