Oh, I see the K81 and TT100 are the same... got it.

Did you find them from that place out west, or did British Cycle Supply have them? You'll really like these tires -- very confidence inspiring, though they are certainly more of an investment than Cheng Shin's. As far as the 'period' look goes, I think they were introduced in 1969 or so to honour the 100 mile an hour lap speed attained at the IOM TT (I could possibly be wrong on that, but that is where I think 'TT100' comes from).

The one you referred to (motoparts) is the one 'out west' that I was thinking of. I think the 2.75x18 is going to be the tough one to find. I believe they have the 3.00x18. As I say, if they can't help you, then Wheelhouse Tyres in Birmingham, UK have them and probably three or four other brands in those sizes. Classic parts and accessories seem to be more available overseas than here, or so it seems to me!
