I just bought a 1972 Honda CL175 Scrambler that has been sitting in a garage since 1983. Its in awesome condition but the cables are bound up. Where can I find replacement ones?

Once you find the parts number you want I've found it most helpful to just search (google or whatever) for the actual part number...beware that dealers may show parts on fiche that they don't actually have...some are better than others at letting you know that.

part number will help with looking on e-bay, too...

The parts list link is dated 1967 for the early sloper engine version, the cables may be the same I'm not sure. Didn't check the workshop manual link it required registering.
Personally I use the on-line parts fiche at someone like Western Hills Honda for the exact model.
I have a 1973 CL175, has your muffler survived?
Not sure what you mean by 'bound up' are they seized if so try removing them and create a sealed funnel at one end fill it with light oil, hang the cable to allow the oil to soak into the cable.
